Be Stitched Baking {Gluten-free Cheese Crackers}

Almonds almost always find their way into my diet daily.  They are an easy, quick, and portable snack that is high in protein.  Almond butter has become one of my recent obsessions as well.  I love it on slathered on a ripe banana for breakfast.  Lately, I have been using ground up almonds as a flour.  Low-carb & gluten-free!  Normally, I wouldn’t consider almonds and cheese as a tasty snack unless I had a lovely glass of Malbec too.  These cheesy crackers are made with almond flour instead of refined white flour and are gluten-free as a result!

{Gluten-free Cheese Crackers}

1 1/4 c  almond flour

1/4 t   sea salt

1/4 t  baking soda

1/2 c  grated cheddar cheese (I like sharp!)

1 1/2 t  olive oil

1 large egg

extra sea salt and garlic salt for sprinkling the top

Mix all ingredients in a medium bowl until well combined.  Roll out between two pieces of parchement paper until you get the thinness of a cracker.  Cut the dough into 1 inch squares using a knife or pizza cutter.  Sprinkle a bit of sea salt and garlic salt on the top before baking.  Bake at 350 degress for 15-20 minutes until desired crispness and browness.  Cool for 20 minutes and break into crackers!
