Be Stitched Baking {Clean Gluten-free Peanut Butter Cups}

This recipe was inspired by an ad for a contest that I saw in Clean Eating magazine.  To quote the fabulous magazine, “Clean Eating is looking for your most sinfully decadent desserts.”  I immediately began to think up ideas!  I kept coming back to the fact that I LOVE Reese’s Peanut Butter cups.  I hate that they do not use quality chocolate and that I really don’t know if you can call what is inside peanut butter. So these clean eating and gluten free treats were born!  I cleaned them up by eliminating refined flour, sugar, and oil, and I added a thin cookie crust to the bottom with dark chocolate on top.

{Clean & Gluten-free Peanut Butter Cups}

Crust:

1 c. Almond meal
6 t. Organic Coconut oil
4 T sucanat (sugar cane natural)
1 1/2 t. Cinnamon
2 T ground flax seed
1/4 t. Sea salt

Filling:

6 T fresh ground peanut butter (or organic from a jar)
2 T sucanat
5 T smashed ripe banana (do not use a green one!)
2 T ground flax seed

Topping:

1/2 bar (1.5 to 2 ounces) of good quality organic dark chocolate, 70-75% cacao
Cacao nibs to garnish

Preheat the oven to 350 degrees.

In small bowl, combine almond flour, sucanat, cinnamon, flax, and salt.  Add in the coconut oil and stir until you have a dough.

Line or grease 12 mini muffin tins.  Loosely fill each tin until almost full of the dough.  Press down firmly to compact.  Bake for 10-12 minutes until you get a golden brown edge on the cookies.  Cool completely.  (I like to freeze them in the tin to speed up the process.)

While the cookies are baking, you can make the peanut butter filling.  In a small bowl (or stand mixer), combine the peanut butter, banana, sucanat, and flax.  Blend until filing is smooth and there are no banana chunks.

On low heat, melt the dark chocolate. Set aside so that it cools but does not set.

On cooled cookies, add about 1/2 tablespoon of the peanut butter filling to each. Slowly drizzle slightly cooled chocolate over each.  Sprinkle with cocao nibs as garnish.  Place entire tray back in the freezer until they are fully frozen.  Enjoy right out of the freezer cold!!!
