Be Stitched Baking {Gluten-free Maple Granola}

{Gluten-free Maple Granola}

2 c gluten free rolled oats

1/4 c each of pecans, pepitas, and pistacios

1/3 c good quality maple syrup

1 1/2 T organic coconut oil

1/4 c turbinado

1 t cinnamon

1/2 t sea salt

1 t good quality vanilla extract

2 t hemp protein powder

1 T ground flax seeds

2 t chia seeds


Preheat oven to 300 degrees.  Line a baking sheet with parchment paper.

Combine all of the dry ingredients and mix well.  Chop up the pecans and pistacios.  Add all nuts to the dry ingredients.

Stir together the coconut oil, maple syrup, and vanilla extract.  Pour over dry ingredients and stir to combine.

After the wet and dry ingredients are combined, pour out evenly on the baking sheet.  Bake for 30 minutes at 300 degrees, stiring once or twice.  Bake an additional 10 minutes at 325 or until golden brown.

Allow granola to completely cool.  Store in air tight container.  Makes approximately 3 cups.
