{Chicken Lettuce Wraps with Balsamic Reduction}

2-3 chicken breasts

1 hearts of romaine

1/4 c diced pancetta

1 clove shallot, chopped

1/4 c chopped parsley

1 t sesame seeds

1 T chicken stock (optional)

4 T balsamic vinegar

freshly shaved parmesan cheese

sea salt

fresh ground pepper

Grill the chicken breasts with a pinch of salt and pepper.  Dice into small bites.

In small sauce pan on high heat, cook the balsamic until it is reduced to a thick liquid, about 1-2 minutes.  Set aside.

In pan over medium-high heat, saute the chopped shallot and chopped pancetta.  Add chicken to the pan with chicken stock.  Toss around until all combined.  Turn off the heat.

Add chicken mixture to romaine leaves and top with parsley, shaved parmesean chese, fresh ground pepper, and sesame seeds.  Drizzle with the balsamic reduction, and enjoy!
