Be Stitched Baking {Gluten free German Chocolate Bites}

A package of Pamela’s gluten-free brownie mix has been in my pantry for a long time.  Lesley told me that they were terrible, and then gave me the mix.  Gee, thanks.  I have just been moving it further and further back in my pantry for a year now.

Rather than follow the package directions and use it to make brownies, I decided to make some German chocolate cake bites.  Apparently I have a thing for bites lately.

{Gluten free German Chocolate Bites}

2 c Pamela’s gluten free brownie mix

1 egg

2 T coconut oil

2 T water

1 T ground flax seed

Topping:

3 T dried coconut flakes

1 T chopped dark chocolate

2 T raw cocao nibs

1/4 c chopped pecans

Preheat oven to 350 degrees.  Add liners to mini cupcake pan.

In a medium bowl, add Pamela’s mix, flax seed, water, egg, and coconut oil.  Stir until combined.  In a small bowl, add coconut, cocao nibs, chopped pecans, and dark chocolate.  Spoon the dough into the lined cupcake pan.  Add topping and press down slightly.

Bake for 10-15 minutes, until a toothpick inserted comes out clean.
