More Bites {Coconut Freezer Fudge}

Add the word ‘bites’ to the end of any recipe title, and they are automatically something cute and portioned.  Like this.  And this.

The ‘fudge’ in the name is indicative of the texture of this treat, not the ingredients.  Traditional fudges have high quantities of sugar, butter, and cream.  This version is superfood packed, gluten-free, vegan, and delish!

{Coconut Freezer Fudge Bites}

I technically didn’t measure any of these ingredients.  Here is my best guess for what ended up in the bowl.

1/2 c sliced almonds

1/4 c freshly ground peanut butter (I was out of almond butter, which I would have preferred)

1/4 c coconut oil

2 t agave nectar

1/4 c shredded unsweetened coconut

1 T chopped vegan dark chocolate

1 T cocao nibs

scant sea salt


Combine coconut oil and peanut/almond butter in a small bowl. Mix well.  Add all other ingredients except sea salt.  Spoon mixture by rounded teaspoon into a mini cupcake tin.  Sprinkle with sea salt, just a few specks of salt each.  Freeze for 30 minutes.  Eat them straight from the freezer (do not let them thaw).
