Be Stitched Baking {Gluten-free Peanut Butter Protein Tart}

I wanted to call this recipe ‘peanut butter protein bars’, but I thought it would give the impression you should be eating this as a post-workout snack.  So I went with ‘tart’, but think of this as a healthier version!

{Gluten-free Peanut Butter Protein Tart}

1/2 package Blackbird Bakery Gluten-free Tart & Pie Crust Blend

7 T cold coconut oil

1 egg


3/4 c freshly ground peanut butter

3 T vanilla protein powder (I used this brand)

1/2 t cinnamon


1/2 c chopped good quality dark chocolate (about 1/3 c when melted)

1 T cacao nibs

sea salt


Preheat oven to 350 degrees and line a baking sheet with parchment paper.

Mix the flour, coconut oil, and egg until just combined.  Roll out on to the parchment paper until you reach desired thinness.  Bake for 20-25 minutes until browned.

Meanwhile, in a small bowl, combine the peanut butter, protein powder, and cinnamon.  When the crust is done and has cooled for about 5-10 minutes, slather the peanut butter protein on!  Melt the chocolate and drizzle over the top.  Sprinkle with the cocao nibs and a very small touch of sea salt.

I cut this into small bars and froze.  They are yummy right out of the freezer.
