Busy Week Ahead {Vegetable Tomato Soup}

On Sunday, I threw a bunch of veggies in a pot and called it soup.  Easy!  You should do it too!

{Vegetable Tomato Soup}

1 sweet potato, cubed

3-4 small new potatoes, cubed

2-3 carrots, chopped

2 cloves garlic, diced

1/2 small yellow onion, diced

1/2 bunch cilantro, roughly chopped

handful of cherry tomatoes (This was a random addition, but they were in the fridge so in they went.)

grilled corn on the cob, cut off the cob (This was also random; hence the black corn in the soup though!)

1/2 red bell pepper, chopped

1 can roasted and diced tomatoes

1 can tomato sauce

1 small can sweet corn

1 quart chicken stock

water

sea salt, garlic salt, freshly ground pepper

Dice everything up.  Saute the garlic and onion in the bottom of a tall pot in a bit of olive oil.  Toss all the veggies in.  Pour in the quart of chicken stock and 1-2 cups of water.  Cook on medium high heat until the potatoes and carrots are soft, 30-45 minutes.  Taste throughout and add sea salt, pepper, and garlic salt, as needed.
