Gave it up for lentil {Lentil and Bean Soup}

It is time to get creative and think outside the box with my meals.  I have never eaten lentils, and I do not really like beans.  This was my first attempt to cook both.  This gluten-free soup turned out pretty tasty!

{Lentil and Bean Soup}

3-4 cups mixed lentils and beans (I bought mine at Sprouts.)

1 quart vegetable stock

3-4 c water

2 carrots, chopped

1/2 yellow onion, diced

1 clove garlic, diced

black pepper, to taste

garlic salt, to taste



Rinse the lentils in a colander for a few minutes.  Pick out any that look bad.  Pour in medium bowl and cover with water.  Allow to soak for at least 30 minutes.

In a tall pot, saute the onion and garlic.  Add the carrots.  Add the vegetable stock, soaked beans, and spices.  Cook on medium heat for 45 minutes until beans are done or cook on lower heat for 3-4 hours.

  1. Jenn, how did the beans turn out? I’ve always soaked mine overnight!! I’m about to try cooking them in a crock pot! I made my first black beans last week….I always wish I had written stuff done bc I can’t ever seem to remember!!! Anyways, they turned out super yum! Chili, cumin, oregano, onion, garlic. Simmered for several hours….after soaking them overnight! I have chick peas soaking now!
