Easy Dinner {Vegan Stir Fry}

Vegan Stir Fry 2

Long week + cold weather + Bowl games on + car wouldn’t start = serious need for an easy dinner…and wine.

The rice was already waiting for me when I got home.  Veggies take less than 10 minutes to chop and cook.  And corking a bottle of wine takes 1 minute…or none when the hubs does it for you!

{Vegan Stir Fry}

1 c wild brown rice (left over extras from this meal)

2 carrots, julienne style

1 zucchini, sliced thinly

1 c corn

2 green onions, sliced thinly

1 clove garlic

2 t olive oil

1 T tamari sauce, if you want gluten-free (or soy sauce)

garlic salt

sesame seeds

Vegan Stir Fry

Slice and dice all of your veggies.  In a heated skillet, add olive oil, onion, and garlic.  Add veggies and a dash of garlic salt.  Saute until heated through.

As my rice was already cooked, I re-heated it in a separate skillet and seasoned with tamari.

Once everything is cooked and hot, throw it on a plate, add sesame seeds, and serve!  Easy.
