Easy Dinner {Black Bean Spinach Bowl}

One of the things I am liking most about my 30 for 30 goal is the lack of eating out at restaurants.  It is just easier for me to cook at home so that I know 100% what is in the meal.  One of the restaurants we have been to during this time is Chipotle.  We frequent this place anyway, so the fact they have plant-based and vegan options too is great.  This meal was thrown together in just a few minutes instead of running out to Chipotle.

{Black Bean Spinach Bowl}

1 can black beans, drained rinsed

garlic salt, cumin, cayenne pepper – to taste, for the beans

3-4 cups/handfuls fresh spinach

1/2 c cherry tomatoes, halved

1 c wild rice, cooked (left over from this meal and this meal)

1/2 cup roasted tomatoes and green chilies, I like Muir Glen

1 c corn

1 small jalapeno, chopped

1/4 c fresh chopped cilantro

1/2 lime, juiced


In a small bowl, toss the beans with spices and heat up in a small saucepan on medium heat.

In a large saucepan, add the roasted tomatoes and green chilies with the cooked rice.  Cook until heated throughout on medium heat.

In a small bowl, toss the corn with chopped jalapeno, cilantro, and the juice of 1/2 a lime.

On a plate or in a bowl, layer spinach, black beans, rice, corn, and tomatoes.  Enjoy!
