No Fail {Kale Quinoa with Cranberries, Lemon, and Cayenne}

I eat a lot of spinach.  Most days, I have a spinach & veggie salad for lunch.  Usually I have a spinach side salad as part of my dinner.  Every time I make a smoothie, a few handfuls of the green leaves get thrown in.  I go through tubs of the organic good stuff.  On the very rare occasion that I don’t feel like spinach…I’ll have kale.  Kale is the ‘it’ vegetable of the moment anyway.  Why not participate?

{Kale Quinoa with Cranberries, Lemon, and Cayenne}

1/2 bunch kale, stripped from stems, coarsely chopped

1 c cooked quinoa

2 T unsweetened cranberries

1 lemon, juiced

1/8 t cayenne pepper, to taste

Add the kale and cooked quinoa to a medium sized bowl.  In a small bowl, add the lemon juice, cranberries, and cayenne pepper.  Allow the cranberries to marinate and reconstitute for 5-10 minutes in the lemon.  Pour over the kale and quinoa and stir until evenly coated.

You can serve as it or heat it up before serving.

The sweetness of the cranberries paired with the tang of the lemon and the fire of the cayenne is something I cannot quite describe.  Delicious though!
